iPhone Accessing Exchange cache

I'm trying to access my Exchange cache on my (unjailbroken) iPhone 4S. In essence, my Exchange backup was lost when we migrated to a new domain and server. However, I can still access previously accessed emails on my phone, even though the Exchange account doesn't exist anymore. I can individually forward each of these emails, but I was hoping there would be an easier way to just extract the cached or temporary files that apparently exist on my phone. Any thoughts about this? I'm worried about jailbreaking because I'm not sure that "backing up" my iPhone will preserve these files.
