Is there someway of not allowing the application to detect my Adobe ID account name etc? I can see my name on the far, upper, right side.

You have to be logged in to use Acrobat DC (if you're using a licensed copy), so no. Acrobat Reader you could choose not to log into.

I use Acrobat Pro 2017 Classic in a DMG file that is a one time installation product (no subscription / no cloud).

There is no ID associated with the Acrobat Pro 2017 for Mac....

Mine is installed from a volume license key.
