Anybody know if you buy a brand new Hong Kong verison Iphone, how do you activate it in the USA. I have heard you need an Hong Kong Itunes account which requires a Hong Kong based credit card?

The phone has nothing to do with iTunes. When you first get an officially unlocked iPhone, it will be locked and deactivated. When you connect it to iTunes, it will contact Apple's servers and automagically activate and unlock it. After that you can proceed to create any itunes account anywhere.

ps: I have an officially unlocked italian 3Gs.
