Activating a factory unlocked iPhone from abroad

Hello,

just a short question from a iPhone newbie. When I travel to a Hong Kong and buy one of their factory unlocked iPhones... will I run into trouble if I let the local shop do the initial activation process for me when I buy it? What happens when I bring the phone back to Europe? Will it work with the non-asian iTunes? Will I have to give up address or credit card info during the process?

A specific question I know, but if somebody knows how the process (even in general) works please tell. I've never seen or done a initial activation so I know absolutely nothing.
