[EDIT: Casperes1996's reply resolved this. No more help is needed. This is happening FROM the lock screen. Anyone can wake it to the lock screen then swipe right and bring up another screen. Right there upfront is displayed any random picture from my camera roll. There is also a search bar. Swiping down on that reveals the last several apps I had open. Sorry if the following was unclear]

iPhone 11 MaxPro iOs 14.2 Is there an easy way to have your phone in sleep mode and locked so it is actually locked? I have several times now had someone snatch up my phone and start swiping all over only to have my supposedly locked phone happily hemorrhage information like what apps I'm using in Siri search suggestions or random pictures from my camera roll. It is infuriating. Going through everything and manually setting everything isn't help because my concern is that I always think I do. Then on the rare occasion, I don't keep a hawkeye on my phone, it gets picked up and the snooper instantly finds something I didn't think of I don't want to be seen. Is this even possible? TIA.

Are you saying someone knows your passcode to unlock it? You can change the time interval for it to lock automatically, and you can easily lock it manually by pressing the side button.

I'm not sure I understand why locking isn't working for you otherwise.
 
If your phone is setup to lock automatically then there is no way for someone to access the device without a passcode. Mine is set to 3 minutes and also to require passcode immediately if I put the screen to sleep. Two different settings, one in display/brightness and other in FaceID/passcode
 
This scenario sounds theoretical - not a real world issue
If it is locked, asleep and unattended anyone can pick it up wake it to the lock screen then swipe right and bring up another screen. Right there upfront is displayed any random picture from my camera roll. There is also a search bar. Swiping down on that reveals the last several apps I had open. This is real and easily demonstrable. Need a video?

Don't need a video, I know what you're talking about. They can also swipe to the other direction and start taking photos (but not see the full camera roll) without an unlock. Furthermore control centre can be accessed and settings adjusted there. Not requiring unlocking for these is a convenience feature and can be turned off. It is not considered "unlocking" to reveal these screens because they are considered more surface level than actual information.

If you go to Settings -> Touch ID & Passwords then scroll down a bit there's "Allow access when locked:"
You want to uncheck Today View and Search (that's the swipe to the left thing)
and any other feature you don't want possible when the device is locked.
