I currently have six 3rd party apps running on my iPhone, two being Finder and Launcher, which allows you to access apps that have run off the screen. I tried using the Installer to install ApolloIM and now Launcher AND Finder are off the screen. Does anybody know how to move them back up (aside from deleting apps)? I started using iBrickr for Windows.

Modify your displayorder.plist file. Put all the new apps that you don't want show on the home screen under the last section (I think it's called "special")...it's the one that originally has the fieldtest.app in it.

If you are using Installer, download rSBT. That allows you to change the order.

Honestly, I have never seen Launcher get pushed off. Its always right next to Installer. Try uninstalling all the apps so you just have installer and Launcher and the reinstall them one at a time.
