I have a new iphone6 plus my question is I already set the phone up through the cloud and really don't want to restore from my previous iPhone 6 back up that's on iTunes. Can I add the music I have on in iTunes to my new phone without doing a restore from that back up. And after I get the music on my new phone just back this one up.

Yes, you can do it that way. Just remember though, if you already have music on your phone, when you sync from iTunes it will remove that music and replace it with what you synced.

I just connect to iTunes and manually move music to the phone?

Make sure you first check the option to manually manage music and videos, also check off "sync only checked songs and videos" otherwise iTunes will attempt to place all your music on the phone filling up space. Then place a check next to each song you want to sync to your phone and then press the sync button. (Of course attach your phone to your Mac.)
