Address Book - how to change Custom Labels?? Unix anyone?

I'm trying to change custom labels in Address book. I created custom labels: Profession, Keyword, Category in same area as father, mother, etc but I can't select them in exisiting files.

Does anyone know a way in Unix to change the value of, say, 'father' to 'Profession'? I don't think applescripts can change it. Can it?
