So yesterday I installed TRIAL versions of Adobe Photoshop, Animate and Illustrator (CC 2018)...problem is that the DESKTOP icons are (I assume) displaying incorrectly. I was wondering if anyone knew of a fix (without me having to reinstall all the apps).

What is "600T"? Is that a document that you created?
That icon that you show is just a generic document icon (not necessarily an incorrect icon, just a generic default) Could be just a setting in your system, choosing to show previews, or no previews on desktop icons. You can change THAT setting in the finder View Options pane.
Select that icon by clicking, then press Command+j
Try toggling "Show icon preview"

600T is no more than an .ai project file. I've tried your recommendations twice with restarts but WORKED the third time (go figure), however now my screenshot PNGs won't display thumbs lol (ah, what a wonderful mac life).
 
If you check "create PDF compatible file" in the save as dialogue box it will show a preview of the file (WhiteC has it off).
