I believe that my GPU only supports 1 external display which I am working with now. I am looking for advice on how to get a second external display working with this Macbook. Can any recommend the acceptable display dock that I can purchase to allow this?

One single external display was a limitation introduced with the first Apple Silicon M1 MacBooks.
I understand you have the last Intel one (10th gen Intel CPU).
You can connect two external displays up to 4K (4096 x 2304) and drive them at 60Hz.
If that is enough for you, there is no need for a DisplayLink dock/adapter.
