Ever since I moved my user folder to a separate internal drive (using a PCIe m.2 adapter), whenever I set any app to be the default for certain file types or in settings, it resets them to the defaults every time I reboot.

For example, after I boot up, Outlook is no longer the default email client, and Chrome is no longer the default browser; I must reset these settings each time.

I know it has something to do with launchctl/services, but I'm not sure how to fix it. Any help is much appreciated!

How you move them. Really just "move"?

For user folder, I think you should use symbolic link if you want to put the actual data on another drive.

Yes. You copy it, move it, and then change the advanced options in settings. Everything works great but just this one annoyance I can't figure out. I've heard creating a symlink for this can cause lots of issues and work really slowly.

Here are the guides I referenced for mine:

I see.

I used symbolic link quite a few years back. It was OK, not sure if still the same in Ventura.

Anyway, did you try this yet?
Code:
sudo /System/Library/Frameworks/CoreServices.framework/Frameworks/LaunchServices.framework/Support/lsregister -kill -seed -lint -r -f -v -dump -domain local -domain system -domain user -domain network
