Can I stream music from my MacBook Pro through a Pioneer Receiver-connected AppleTV without having my TV on?
Does anyone here do that?

Yes, that does work.. I first tried because I didn't want to leave my TV on while in the other room listening to music (I have a 3 zone setup). When you turn off the TV, the sounds goes off for about 5 seconds then kicks back on, this is if you are routing everything through HDMI.
FYI, I am using a Denon Receiver, so it might work slightly different on Pioneer.

Also, you will need to use Apple Remote on your Ipad\Iphone or of course you can use your laptop to control the songs.
 
Can I do it without ever turning my Panasonic Plasma on? (I mean after the initial setting up etc.)
How would you wire it? HDMI? Optical?

I have my Apple Tv connected directly to the HDMI input on my receiver and the receiver is connected by HDMI to the TV. However, you can just connect the optical output on the Apple TV to your receiver if you have the HDMI connected directly to the TV. Either way, audio plays on the receiver without ever having to turn the TV on.

I do it all the time when listening to music from another room.
