Each time I select to mirror my screen to the MacBook, it moves the sound as well to the MacBook. I can't seem to manage how to keep listening to my AirPods but only have the MacBook function as the screen. Is there a setting I can change? (whenever I choose in Airplay/bluetooth my AirPods again the video disconnects from the Mac)
 
Airplay will always “cast” both video and audio. Have you tried connecting your AirPods to the MacBook and then use Airplay from your iOS device?

I tried connecting to MacBook first, and then put on my AirPods, it stops a short moment and then continue without sound. Another time it just plays the sound on the MacBook but somehow connects to the iPad. then I tried what you said, first make sure it's connected to the MacBook, then mirrored it, but it just play on the MacBook speakers. Seems like one can't direct the sound separate from the video.

Try going into Settings > Sound > Output & Input and select your AirPods in Output.

Somehow indeed it got this to work. Previously when connected to my AirPods the output as you described was already on the AirPods. Now I mirror the iPad first to the Mac without playing it first on the iPad (which switches my AirPods back to the iPad). Make sure they are still connected to the MacBook, then mirror, then play. It works somehow now whereas whatever I did before didn't
