Have been using 10.8 as a developer since DP1 on my current gen 12-Core "Mac Pro", 2011 iMac, "Mac Mini" and 2011 "MacBook Pro". AirPlay works on all aside from "Mac Pro"; although it did for the first DP1 for some reason.

It's not a deal breaker so I haven't bothered reading all Apple ADC doc's, any idea why this is the case?

Yes. The mac Pro lacks the dedicated on board chip that Intel requires as part of QuickSync. It is only on the recent i processors and not the older Xeon processors. That is based on Apple’s implementation that requires specific hardware that your Mac Pro does not have.
