So there are plenty of cables on Amazon but these are mend to be used to connect an Iphone to a car stereo, so the other direction and do not work.

Apple does not sell one yet, any Idea? Looks like they might have dropped the ball

Apple sells an Lightning to 3.5mm cable that is bi-directional and will work for this: https://www.apple.com/shop/product/MXK22AM/A/lightning-to-35-mm-audio-cable-12m-white

The other option is to get a 3.5mm to Bluetooth dongle that will allow your AirPods to connect wirelessly: https://www.twelvesouth.com/products/airfly

If you have the newer AirPods Max with USB-C, then Apple's USB-C to 3.5mm adapter can be combined with a 3.5mm-3.5mm AUX cable to make a wired connection.
So, this: https://www.apple.com/shop/product/MW2Q3AM/A/usb-c-to-35-mm-headphone-jack-adapter

And this:
https://www.amazon.com/Syncwire-Braided-Auxiliary-Adapter-Headphones/dp/B01I0SI1SG

Edit: I was wrong about the second part. It does work on certain USB-C headphones but not the AirPod Max based on user reports.

Did this actually work for you? Every other post I've seen so far states the USB-C adapter does NOT work with the Airpods Max.
Sorry for spreading false speculation. I was basing this on other experiences with USB-C headphones and just assumed that the AirPod Max would work the same way. The USB-C to 3.5mm adapter from Apple is known to be bidirectional, so I wonder why that solution doesn't work with the AirPods. Perhaps they do not put out enough (any?) power for the adapter to work?

I am still uncertain about the issue with the AirPods Max USB-C port. The Beats Solo 4 is functioning correctly, offering both analog and USB-C connectivity. However, the analog-to-USB-C converter is malfunctioning. It either lacks power from the headphone or is not bidirectional.
