Not sure if this is anywhere but there's a few options to configure double tap, AirPods name and which mic is used.

Go to Bluetooth settings and click the (i) next to he AirPods. You can set the double tap to pause-play or Siri or off.
 
after going through my first 1+ hour conf call using Airpods, I wish I could double tap to mute.
 
I've configured it for Play/Pause on iOS but it still invokes Siri on macOS. Is there any way to get double-tap to also do Play/Pause on iOS? (I never use Siri on macOS, even went so far as to turn it off.)
