I have a Pixel 7 phone and an Ipad Pro. I read that with an Airpod I won't be able to use all the functions on my phone but I also have an Ipad Pro so I guess it won't be a problem with it. You may wonder why do I need an Airpod since I have an Android phone? Because then I will get 3 months of free Apple TV+
My question is : would you still recommend Airpods in my case? Will basic Airpods be Ok or shall I invest on a Airpods pro or Max?

If all you want is free Apple TV, just get the least expensive AirPod model. They are just regular earphones, after all. Only advantage they have is if you have more than one Apple device, you only have to pair it once, and it pairs with all other Apple devices signed into your Apple account.

Mmmmm debatable.

The thing is that the H chip is irrelevant when it comes to Android, and the Airpods are not multipair. So there will be an occasional degree of futzing when it comes to (re) connecting your Android. It will work, just that you will be occasionally fighting the Airpod + Android. And I can guarantee it'll be the occasion you need it to work 🤣

Theoretically speaking, a multipair Bluetooth TWE that supports two simultaneous connections would be a better bet... but this time you're left with the vagaries of Bluetooth-only connection with the iPad, which isn't necessarily the most reliable with third party devices. But *theoretically* this should work better and should be tested thoroghly during the return period.

I gave up using earphones cross-platform, and I also gave up using non-Apple earphones on more than one device: The reason why I have several pairs of Airpods is for convenience reasons - I have them spread out around the house so that I can sit down at any Mac or pick up any iPad and have the pair in my ears work (as well as two pairs for dedicated outside use), or be able to swap between pairs for marathon meetings. The reason I have several pairs non-Apple earphones and they are paired to one Windows/Android device each is one of necessity - for them to actually work when I take each one out of the case.

I REALLY wish there would be an international standard for UWB assisted Bluetooth earphone handoff so that it's not just Apple's H chips which do this.

I've been using Bose Bluetooth earphones with my iPads for years, and I never experienced any connectivity problems. They remember up to 8 devices you pair them with, and you can switch among devices by clicking the main button on the earphone. The experience is almost as good as with AirPods -- only difference is with Bose, you have to go through the pairing process with each of your devices.

Hmmm. I have. Which model(s) as a matter of interest?

In your case you should go with Beats Fit Pro, they have an Android APP that will make your Android phone fully compatible and will be fully compatible with your iPad and any other Apple device you might purchase.
