Purchased the Airpods Max yesterday and paired them with my Iphone 11 Pro Max and my Apple TV 4K. I have only used them for a couple hours but I am pleased so far. My question is when watching Apple TV with the Airpods Max, how do I answer a call on my Iphone? Thank you for the help.

Someone please correct me if I'm wrong, but I don't believe you can answer the phone call directly from the AirPods Max (or any AirPods model) when connected to your Apple TV. You'd have to answer using your iPhone and then tap the audio source icon on the phone to switch it to your AirPods.
I'm not at my Apple TV right now to test this, but I just called myself on my iPhone while my AirPod Pros were connected to my MBA and when I answered my iPhone the AirPods did not switch over automatically to the iPhone - I had to tap on them from the list here:
