I'm having problems with my AirPods retaining the Play/Pause double tap setting between uses.

Actually, if I go into Settings>Bluetooth, the Play/Pause action remains selected, but double tap activates Siri instead, complete with the annoying lag. Toggling back and forth resets it back to functioning as Play/Pause. This is in latest incarnation of iOS10.

Any suggestions?
 
Have you tried forgetting them, resetting the airpods (long holding the button on the back of the case) then repairing them?

Re-set your iPhone (Power on/off only) and re-pair then Airpods. It should rectify the issue.
