Amazon has the air pods pro 2 on sale for $199. If something should happen to them is the Apple Store able to fix or replace them if I buy apple care through Amazon??

Yes, it is the same AppleCare that you’d get buying directly from Apple. I’ve used it with Apple before after buying from Amazon with no issues.

Looking to buy them for my boyfriend. So I assume since it’s under my name, I’ll have to take the possible broken air pods to the Apple Store for him?

Yes, you get an email from Amazon Marketplace with the AppleCare info. It is linked to your email account but I think Apple lets you transfer the AppleCare to another person so you might want to check that out.
