I've had the new Bose earbuds since Monday and have been pretty impressed with their noise cancelling ability. I've been testing them on my motorcycle and at max noise cancelling level, I can't even really hear the engine. It's in fact too much cancelling. I ended up having to turn it down to 7 out of 10 in order to hear the sound of the engine and other street noises.

With the new Pros now I've noticed that on my motorcycle they just so happen to have about the equivalent cancelling of the Bose at level 7 out of 10. Which is perfect for my use as that's about the amount of cancelling I want on my motorcycle for hearing protection. For those who want max noise cancelling though there is no question the Bose are on another level. When you have them at max noise cancelling it's a different thing entirely compared to the Pros. The downside of the Bose noise cancelling though is they have a very audible noise floor when you have nothing playing while the Pro's noise floor is barely audible.

As far as sound quality goes I was pretty happy with the Bose other than the bass being too heavy for my taste, but that's somewhat fixable using the EQ in the Bose app. After hearing the new Pros though I can't go back to the Bose. The new Pros don't have the crazy bass the Bose have, but they are much more balanced, clear, and have a larger soundstage. Listening to the Bose on the same tracks they just sound boomy and congested in comparison. I'm using Apple music with a 13 pro and I don't know if it's the case, but it almost seems like a higher quality file is being streamed to the Pros than the Bose with how much more detailed they sound.

And of course the new Pros have been less finicky with connecting, it's just an easier and more seamless experience. I've had some connection issues once in a while with the Bose. All of that combined with the lighter weight/better comfort with the Pros have made them the clear winner for me for my uses. For those that want crazy bass and/or maximum noise cancelling ability though, the Bose are the way to go.
