When I put the AirPods in their wireless case and plug it into the charger, an amber light shows up for about 2 seconds and then goes away. Is the light supposed to remain on? And if this is normal, how do you see when they are 100% charged while in the wireless case? Sorry for the noob questions.

It's normal. It'll turn green when fully charged.
So from the time you plug it in until it’s 100%, the case gives no indication light? Seems kind of odd. I installed the battery widget, but I just expected the case to show you a charge level also.

No, there's no indication light. I just open and close lid to see the light. It's weird, but it's how it is. Or open lid near your iphone to see pop up.

Here is some information I've cut&pasted from
Apple Support. I hope you find it helpful:

Charge your AirPods and learn about battery life

If your AirPods are in your case and the lid is open, then the light shows the charge status of your AirPods. When your AirPods aren't in your case, the light shows the status of your case. Green means fully charged, and amber means less than one full charge remains.
When you connect your Wireless Charging Case to a charger, or place it on a Qi-certified charging mat, the status light will stay on for 8 seconds. If the light flashes white, your AirPods are ready to set up with one of your devices. If the light flashes amber, you might need to set up your AirPods again.
