I'm in Austin, Texas - a pretty major market.

If I try and order AirPods Pros right now, I cannot pick up at either of the two local stores until NOVEMBER 25. However, two other stores 65 miles away (San Antonio), I could pick them up tomorrow.

Does the in-store availability change or is Austin really sold out for 3.5 weeks?

Likely that store is currently out of stock, but the in-store availability will update when Apple Store receive stocks. Doesn't necessarily mean it will be out for 3.5 weeks. If Apple receives shipment tomorrow then it would update for available for pick up.

Yesterday, Apple store near me received over 100 in stock, and by the end of the business day, apple.com showed that it was not available for pick and showed the future date. However, that being said, they completely sold out. This morning was still showed out of stock and later in the afternoon, Apple.com updated and showed that it was available for pick up. So they must have received more today from shipment. But 2 hours later it's out of stock again.

istocknow.com is the best choice to check, as you can set up email notification of when they arrive. In fact, istocknow.com has been fixed so it is up-to-date.

What's weird is istocknow.com has said that they are available all day. But the Apple webpage, the Apple Store app, and calls to the stores (very hard to get someone on the phone in-store) all say they are out of stock.

Can't figure out why istocknow.com isn't accurately reflecting this.
