When I bought my AirPods Pro in November I swore I set them (in Settings>Bluettooth>AirPods) to skip forwards or back to the next/previous song when squeezing a stem. But now it seems the only options are for noise control or Siri.

I'm not imagining this, right? Squeezing the stem to go back/fowards in a playlist used to be an option when the AirPods Pro came out?

squeeze twice to go forward; three times to go back.

This is in the paper "getting start" guide in the AirPods Pro box as well as the online documentation, neither of which you apparently bothered to read.

Note that these playback controls are exactly the same as the wired earpods/earbuds that Apple has shipped for years and years with iPhones and iPod touches.

These playback controls work identically with pretty much any third-party headset that has a control button/mic on the cord as well. I think I have four earbuds and at least one over-the-ear headphones (Bose QuietComfort QC25s) that do this.
