I recently upgraded to Monterey from Catalina on my 2017 MacBook Pro. There are so many things I'm really struggling with now -in particular Mac Mail version 15. I've always liked using Mac Mail but now it's a nightmare for someone with poor vision as everything is in pale grey and there's no way to choose black fonts.

Even worse is that all the Inbox emails have disappeared from one of my Mailboxes and this has created a lot of problems for me. I would welcome some help as to how to get my messages back into that mailbox. I hope they are not lost and gone forever...

Also, in Catalina I could highlight some text in an email I received and somewhere in the Mail menu bar it would show me the name of that font. I can't find that now.
 
I cannot see your mail and I have no idea of your level of experience, but have you clicked to the left of the "all Inboxes" icon and expanded the list? Apologies if you have already tried this.

As far as the lightness of the font that is a common complaint and one I hope Apple addresses. There is an option in your Mail Preferences>Viewing to "Display unread messages in bold font." Do you have that checked?

The font selector is no longer in the tool bar. If you right click on the toolbar there are options for reconfiguring it, but I do not see the font selector anymore. You can select it by going to Mail Preferences>Fonts and Colors and adjust your fonts there. I hope this helps some.
