What, if any software options for Big Sur allow users be able to login, save their menu bar and access their home folders that are stored on a “server” iMac from “client” iMacs? Like MacOS Server before it was deprecated, or anything close to this.

Homebrew has an OpenLDAP install, you’d need to configure it manually (command line/config files) or find a 3rd party GUI app for openldap. Definitely not as simple as OSX Server used to be. Dont think there’s anything else out there natively for modern OSX installs.

Synology NAS has an openldap service with a GUI for easy config. Active Directory would work too, but that would require Windows Server/hardware.
