Hi, I have the impression that most of the iOS games are similar. It looks like iOS games are mostly divided into a few categories. Developers use the same engine? available in each categories and just change the appearance to make their games different. Am I right?

Not really. You've got a wide variety of puzzle, find the object, RTS, First/third person shooters, driving, flying, classic arcade, scrollers, etc. Controls can seem similiar, with either touch screen, virtual buttons, or screen tilt (I believe). I would categorize most of them due to iOS limits as being casual games.
