I was watching the keynote and from what I saw, there didn't seem to be too many reflections on the screen the way I would have expected from a unibody macbook.

Of course I'm sure they set things up to make sure they didn't have a bunch of overhead lights bouncing off the screen but I'm wondering if they put an anti-reflective coating to help the reading experience.

It has the same type of screen coating that the iPhone 3GS has. It's still very reflective, but I guess it's slightly improved from the previous models.

The big advantage of the screen coating? You can clean the screen very easily. I often just rub my iPhone against my shirt for a moment and it looks pristine. That would never work with the original iPhone or even the iPhone 3G.
