I've been thinking of getting the iPad Pro, not sure which model yet. Tried the Apple Smart Keyboard and while it felt good to type on, the folding was a bit fiddly and it doesn't offer any alternative angles or a convenient way to set it up for just reading. Plus it's hideously expensive.

I currently use the iPad Air 2 with a Logitech Type+ cover and I've been happy with it (as long as you ignore the cheap pad printing on the keys), both as a slim case for protection as well as a keyboard. Is there anything similar available for the iPad Pro models? The Logitech "slim" case seems really bulky and the 10.5 model doesn't even fold at the front. Same with the Create model for the larger iPad Pro.

Both Logitech models you mentioned, Apple Smart Keyboard, and the future Zagg Keys are the most popular keyboard cases/covers. An alternative is using a full wireless keyboard. Works, but not my cup of tea.
