Any Email app that lets you hide folders you don't want to see please?

You might want to try to reach out the developers of Airmail, Spark or Email by Easylido they have quite a few advanced features onboard especially Airmail.

Apple's own Mail app does support it though as Brian Baughn also indicated below.

User-created Gmail "folders" can be hidden from IMAP clients and that feature works in iOS Mail.
