Anybody have any idea how to access apps behind the 16 pages that you can flip through on your iOS device? With older version of iTunes, there was app management features that allowed you to see all the apps on your phone. The latest version of iTunes has taken that away.
 
Can't use folders if there is no way to access those pages via iTunes anymore and the apps don't fill empty slots on the visible 16 pages with an iTunes sync.

You already answered your own question:

With older version of iTunes, there was app management features that allowed you to see all the apps on your phone. The latest version of iTunes has taken that away.
iTunes can no longer manage or download apps. They must be managed through the home screen, Settings app, and App Store.
