Can't seem to find out, if there are any third-party-apps that take full advantage of the 120hz display on the iPad Pro?

Of course the Apple apps do, like the Maps app etc... But I would love to game at 120 FPS, wouldn't you?

If your playing a game generally it’ll be around 60fps in iOS. If it’s a fast moving scene the display will output at 120hz showing a single frame twice giving a smooth look. Does that make sense??

Try iTunes movies 1080P (12.9 pros download 1080p only) and you will see this palpable. Or read the mags/books of your subscriptions through its apps.

All apps that uses standard iOS apis, for scrolling etc, are 120hz. Just look at hos smooth Flipboard looks for instance
