I've upgraded my 5,1 (high Sierra) to an rx 580 but I have no idea now how to get into my windows partition and back. I'm worried that If I chose it in startup disk on MacOS I won't be able to get back after booting into windows.

Any tips?

My recommended method - Use BootChamp (NOT Bootcamp) with SIP disabled.

Other possible methods

1) Use system preference to select Windows partition on next boot. Then perform a PRAM reset to go back to MacOS.
2) Install HS on a HFS+ partition, so that you can select it for the next boot in Windows Bootcamp apps
3) Install a 10.12.6 at somewhere, so that you can select it in Windows bootcamp apps, then further select HS inside Sierra.

Has anyone tested the new BootCamp apps from an iMac Pro? I hear they have been updated so I wonder if APFS boot selection functionality might been finally added. Worth a look.

Please God, I hope so! Please let them roll the options out to the rest of us!!

I think that update is just barely let the iMac Pro can run properly in Windows, didn't heard anything about APFS support.

This would be my recommendation too.

A more 'seat-of-the-pants' solution would be to hold down the 'Option' key during boot, wait about 30 seconds, tap either the left or right arrow (assuming you only have two boot drives), hit 'Return' and see what happens.

I'm assuming to get back to how it was with HFS+ boot disks when SIP is enabled Apple need to rewrite the bootcamp disk selector application they install in Windows before APFS boot disks can be selected?

i.e you can't install Paragon APFS software in Windows to see the Mac APFS disk?

I tried Paragon APFS and it only allows you to access APFS volumes in Read Only mode. Also the BootCamp control Panel (even with Paragon APFS installed) will not show the APFS volume to allow you to select it for re-boot.

I guess we have to wait for Apple to update the BootCamp control panel.
