I want to be able to remotely control and screen share an iPhone (or iPad) ***from*** my Mac? I want to run an app on my iPhone and/or iPad from my Mac. Seems the other way is easy. Lots of apps to access/use my MAC from my iPhone but not the other way around.

I looked at "SWITCH" on the MAC but that doesn't do what I need. (If this is a dumb question please bear with me, I am a MAC Newbie - been a PC guy since they were "invented" back in the old days)

It is certaintly possible because Apple Support has taken over my iPhone a few times to check things out. But I don't know what "consumer level" apps will allow you to do this.

Right on their website they say that control is not possible: “It is possible to see everything that appears on the iPhone (or iPad) display , but it is not possible to interact with it due to specific restrictions imposed by Apple.”

I was assuming you’d add your own robot finger and control app. 😝

Not easy for sure. For my simple needs starting with a Piece of Pi is a bit of overkill. I do have a 7yr old Samsung Galaxy S8 in my drawer and it was a Piece of CAKE . I used TeamViewer, worked great on the old S8. Only problem was the S8 screen image on my 32” Mac Mini monitor was only about the size of the S8 phone’s screen which kind of defeated my whole purpose. If I can work around that and if I can sell my spare iPhone 13 Pro (posted in the for sale section here!) and get a used Galaxy S21 or S22. The iPhone 15 PM is my daily driver and hoped to use that but evidently that’s not to be.

Yes, TeamViewer offers an Android Host version which simplifies things significantly.
You have not mentioned the app in question. But in general, if the app's developer has unlocked it, you can run it on your Apple Silicon Mac:
