Will such methods work on M1 Mac such as the MacBook Pro 16" 2021? After downgrading, is the system stable?

You cannot run a version of macOS older than the one shipped with your computer. The 2021 MacBook Pros shipped with Monterey. They cannot run Big Sur.

The 2021 MacBook pros didn’t exist when Big Sur came out. The drivers and kernel extensions for the new hardware just aren’t in there.
No Mac can run an older OS than the one it ships with originally. That’s the way it’s always been.

It is possible and I have successfully done it many times — on both PowerPC and Intel Macs. I have no experience with ARM Macs though.
