I'm on iOS 15.0. I have three Gmail accounts set up on my iPhone 13 Pro Max just like I did on my other iPhones. The Mail app is frequently stuck on "Checking for Mail..." and even when that goes way, it will often say "Updated x minutes ago" (where x is a number) instead of "Updated just now". I do get incoming emails, but they seem to randomly pop up and I never hear the notification sound, even though I have that set up for Mail. The notification badge icon also takes forever to update (e.g. will say 7 new emails even though there are none) and some emails never load when I open them (just get the spinning "loading" icon forever). This happens both on multiple wi-fi networks as well as cellular date. Already restarted my phone and quit the Mail app multiple times - makes no difference.

I occasionally had these issues with previous versions of iOS, but never this bad.

I didn't either until I installed the iOS 15.0 update. For example, as a test, I just sent an email from one of my Gmail accounts to another using the web interface. I open up the Mail app on my iPhone, and it says "checking for mail" at the bottom, but never shows the new message. Once I pull down on the screen to refresh it, it shows the new message, but "checking for mail" stays at the bottom, and if I go back to the home screen, there's no new mail badge on the Mail app icon. Finally, after a couple minutes, the app will update to say "updated just now" and the notification badge shows. So right now it's behaving a bit better, but still fairly sluggish compared to previously.

But I'm still not getting any banner notifications or "Ding" sound when I get new emails, even though I have that set up correctly:
