that the new iMac 21.5" models are already showing up in the refurbished section on Apple's site? Only saying because I have yet to see a nano with a camera or a 3rd gen Touch on the refurbished iPod section, even though they were released earlier? Do you think Apple might be purposely holding the refurbished iPod models back on purpose because of the holiday?

I would say it's because of the many problems the new iMacs had. When an item is replaced, they fix it and sell it on as second hand. There probably have not been that many replacement iPods, and if there has, it might be something major and would be more cost effective for apple to simply recycle or throw away.
 
Maybe a lot of people are returning them because they decide they want the dedicated GPU 21.5 (from the base) or 27" screen.
