iPodRip is an amazing app. You can use it 10 times before having to pay the shareware fee (which is just $15 - quite a deal considering the utility). It grabs the songs off your iPod, restores the ratings, and rebuilds your playlists.

Previously I'd used the freeware Ollie's iPod Extractor, but it's been replaced by a different app which I couldn't even get to work.

I use iPod viewer, it's simple, easy and fast. I would recommend going on version tracker and going through several different programs and finding the one you like the best. They are all free too.
