You should be able to create a RAID 10 by using the Terminal commands in that link pastrychef provided, by first making two mirrored RAIDs then striping them together afterwards.

I believe it will work. Here is an old walk thru on RAID 10 using the Disk Util GUI, and it is basically doing the same thing using Terminal commands mentioned.

Put the downloaded file "Disk Oldility" in the Applications folder
Open terminal
Tape "sudo chown -R root:wheel" (Dont forget to add a space at the end)
Drag the "Disk Oldility" into the terminal window, Press Enter and Run the app (takes some time to start).
