I swear I've tried just about every email app out there and every one I've tried has problems refreshing in the background. I have to open the app for my inbox to refresh. I've used: stock email app, Edison, Spark, Gmail, Outlook, and a few others that didn't work. Anyone else have these issues and do you have a fix? Thanks!

It's a relatively new problem. Older versions of iOS with the Mail app work fine updating in the background.
There's endless complaints similar to yours. All you can do at this point is wait it out and hope the problem gets fixed (or use an android phone)

Since updating to iOS 13 the iphone mail app is totally broken. I get the drop down notification I have received an email but when I go to my inbox it's not there. I then have to force refresh and often many emails flood in from hours ago despite me setting to fetching every 15minutes. Even when a new email shows once I click it takes a good chunk of time before the email text and images show.

Often when refreshing the inbox all my emails disappear then after a few minutes they are drawn back in like they're coming in for the first time.

Ive spoken with Apple and done every step on the check list to try and fix this issue. They now want me to book a call with an engineer as this may now be a hardware fault. I don't believe this as the rest of phone performs fine. I used an ipad pro for a few days and still had this email issue so I think a combination of my ios backup/profile and iOS13 is totally broken.

Upon doing some research it's clear there are many people suffering with the default mail app but you get zero sympathy from users who have no issues because their world is fine. Ooh maybe we're doing it wrong.......? For the rest of us who use email as a main form of communication for work and pleasure we are screwed until/if Apple work it out. No word on iOS14 offering any fixes yet.

Question is do you want to let a third party app have full access to your emails?
