Wondering if I should make the jump with the new OS update on my 1,1.

It doesn't mess with boot.efi so you should be all set. Mine upgraded without issues.

Can anyone confirm that this is true even if updating from an earlier update. I'm currently on 10.11.3 and I know that 11.4 and 11.5 both messed with boot.efi so I held off. If I update directly to 11.6 will this leave boot.efi alone, or will it apply the change to boot.efi that was in the two intervening updates?

I'm willing to bet that if you're not on 11.5 already, then 11.6 will install 11.5's boot efi. So you might run into issues. However, if you have a bootable drive that works, install 11.6, then boot into your good drive, replace boot.efi, then restart back into 11.6 (let it finish installing) and when it reboots, you might have to do all of that again (since it replaces boot.efi again).
