I bought a Mac Pro in late March 2015 with Yosemite pre-installed - alas, my recording software Logic 9 doesn't get on with that OS to say the least. I may be able to get hold of a bootable flash drive that has 10.9 - has anyone been able to install Mavericks on a Mac that they bought around this time? I know that it's unlikely considering when I purchased it, but I was hoping that 10.9.5 might work...

It should work unless Apple has updated Firmware to disable it.

Mac Pro 2013 shipped with Mavericks so 10.9.5 is likely to work.

I can always use Internet Recovery to restore Yosemite if needs be anyway, right?

I would recommend that you make a full backup of your Yosemite system (clone or Time Machine) to an external drive, then if there is a problem with Internet Recovery you have a Plan B to restore Yosemite.
