Im currently using VLC and while full screen works fine on my native macbook pro, I cant figure out how to have full screen on the external monitor. How do I do this without using the mirror display setting?
 
If you make the external screen your primary display (drag the little menu bar to the other screen in the layout but of the display preferences) then fullscreen should be on the external display.

(But when I disconnect from the display, I am assuming there will be no problems with my macbook pro screen going back to the primary display?)
 
With VLC it's easier than this.

There's a menu entry for "Video Device" in the Video menu. If you select the external display and switch to fullscreen it goes there w/o making the external the primary device.

QT has a similar option, only Front Row will only run on the primary display.
