APFS on USB stick?

Not that I think it matters, but curious as to why on HS there is no way to make a USB stick APFS as opposed to OS Extended
Was just told to use that for iMovie on external for the library stuff. I'm using Extended but just curious why there is no drop down for it as HS is APFS or is it because it's a stick?

Make sure you choose "Show all devices" in the View menu. Then select the top level of the device. You also need to select GUID partition map.

I did do the show all devices, but only clicked delete for the options, not GUID?
