Hello,
I want to play some music via Spotify before I sleep and I want for example sleep MAC in 60 minutes (not every day).

Is there any app where I can set countdown and MAC will put in sleep?

Thank you.

Sure but don't want it for everyday as I wrote

Type in Terminal

"shutdown -s +[number of minutes until sleep]"

The "-s" means 'sleep'. You can also give it an absolute time in the format yymmddhhmm. yymmdd can be omitted if it's the same day.

It only does it once, so you'll write the command every time you want to set the timer. You can make a script if it's the same time every day so it's just a click away
