App for opening documents?

All of those open just fine on their own if you are viewing an attachment in Mail or seen from a browser. I guess it depends on if you want to store those files somewhere, but then usually those places will have a way to view those files, like Google Drive, or Dropbox, or OneDrive, etc.
Yes like when my teacher emails me documents of things to read etc....?

You should be able to open the PDF or Word document right in the Mail app in iOS. And, yes, various document apps like Word or Acrobat Reader are free.
It's not exactly Preview per se, just something that's supported within the app--you see the Word or PDF attachment in the email, you tap on it, and it opens so that you can read it.
On iOS opening Word, Acrobat PDF files is always free and easy.
If you actually want to adjust and save e.g. Word files then you need to download the Microsoft Word app and get a (free or paid) account @outlook e-mail address (free) or Office 365 (paid) account to login or go with third party apps like wpsoffice.

How do you choose it as the default app to open documents?
Like when I open a document it opens with preview....not Readdle
I've got no clue how to choose it as the default app... im using it mainly as a file manager.
You can't its iOS
The only option you have is either start from Readdle or any third part app for certain documents or if you maybe have some setting in e.g a third party e-mail app or cloud storage where the file is you try to open.
Otherwise there is the so called Share Sheet feature where you can open a file in ... (if the app you want to use supports the Share Sheet feature in iOS). The downside is that you have to manually select it each and every time.
If you just want to read a PDF or Word file I think you always can without using third party apps on iOS by iOS itself so you don't need any Apple app as well for that. Do you however want to edit a Word of PDF file then you can use options such as Microsoft Word app (but to edit you need to login with either free Outlook.com e-mail account or paid Office 365) or apps like wpsoffice (no account/login required other then giving the app access to e.g. Dropbox/Google Drive if you stored files there).
