I want to move my iPad syncing from one Mac to another, preferably without copying the applications that are already on my iPad from one Mac to the other (as I don't have the original Mac with me today).

Both Macs are authorized for the 2 iTS accounts that the apps have come from.

I have already ripped the music and video with iRip.

When I got to set syncing preferences in iTunes, it says that all apps on the iPad will be replaced by the apps from my Mac, and while I can select the apps that are on my iPad but not on my Mac, it allows me to select them, but shows the icon as an App symbol (similar to the logo for the App store).

Any ideas?
 
Make sure you're logged in to your itunes account on your computer - being authorized isn't the same as being logged in. Once logged in, right click on your iPad icon and select "transfer purchases."
