My correct icloud account is being used on my mac. However, only in the app store it is recognizing my old email address to my old icloud account. The text to login is "greyed" out and does not allow me to log in to my current account.

Any advice on how to fix this so I can update my apps?
 
Not sure what you mean exactly. But you iCloud (System Preferences) does not need to be the same as your App Store (See Store / Sign Our or View my Accout). In my case they are separate for sharing reasons.

I'm logged in app store under my correct and current iCloud account. When I click the option "update all" a pop-up comes up with my old iCloud account email address, the one I am NOT signed in under. I can not change the email address on the pop-up because it is greyed out.

I understand now. You have purchases or installation that were done under a different account. You would need to login to that account to update the installed Apps. I did that before. I think were some fee Apps from Apple when I got a new computer. I had to uninstall them and then reinstall with a different Apple ID. For a while I would just sign out of one apple id then sign in to the other apple id to do the updates.
