since Apple has claimed to be purging the App Store of broken and maybe spam apps I was wondering if there was anywhere that showed just how many they are removing? Like is there a real time app total anywhere or anything like that? Has anyone seen any of their apps removed or other apps removed?

Appshopper.com use to have an app counter. Not sure if it's still there.

Sweet this will be a good reference point as long as it's acutally counting the removed apps and not just adding new apps when they are added.

It will hard to tell the difference of removed apps when just as many new apps are probably being added and continue to be added on a weekly basis. You won't get any kind of accurate gauge of how many are being removed.
