On my iPad, three apps have been stuck on installing for more than a week but I am not able to delete them. For some reason every other app can update and install except for these three. I've tried resetting the home screen but it did nothing. What should I do to get rid of them?

Have you tried rebooting your device?

Go to the apps in the App Store and see what it shows. Maybe you can cancel them there or maybe it will show the cloud icon to install them again

When I go to the App Store it either says "Update" or has the spinning circle on it. And if I try to cancel it it just becomes light blue and continues spinning.

Have you tried reloading the App Store by tapping on one of the tab icons at the bottom (like the update one) 10 times? What about signing out of the App Store in setting and then signing back in? Or perhaps finding the stuck apps and deleting them (perhaps from the manage storage section in settings) and then downloading it and installing it again (basically not needing the update at that point)?

I've already previously reloaded the App Store and it did nothing. However, just a few minutes ago two of the apps somehow finished updating and the last app wasn't appearing on the home screen but it appeared in the update section of the App Store. So I used your advice to delete it from settings and it worked! Thank you for your help.
